Dinner tonight: Vegetable Frittata

Our weekly plan is our guide to our meals – we mix up the dinners sometime and eat what we are in the mood for. Easy is what was on my menu for tonight – so I opted to have the vegetable frittata early.

Our Vegetable Frittata ingredients varies based on what I have in the fridge and what needs to be used. Below is tonights ingredients but you could add spinach, mushrooms, bell peppers – really anything goes.

Ingredients

1 tsp olive oil
1/2 medium onion, diced (you could use leeks or spring onions)
1 garlic clove
1 small head of broccoli, chopped into small-ish pieces
1 medium-large zucchini, grated
1 tomato (I used a Roma tomato)
salt and pepper for seasoning
5 eggs, lightly beaten (You could use three eggs and 1/2 cup of egg whites)
2 tbsp italian cheese, grated (optional)

  1. Heat pan on medium heat. Place olive oil in the pan, then the onion and garlic. Cook onion until clear.
  2. Add Broccoli, Grated Zucchini and tomato to the pan – heat ingredients through. I add the broccoli first and then the other ingredients. Cool.
  3. In a small bowl, lightly beat the eggs. Add the vegetable mix to the eggs and lightly stir.
  4. Place the egg mixture back in the pan you were using to cook the vegetables.  Add cheese to the top (optional, My husband wanted cheese I did not so I only added it to one 1/2). Cook mixture for 10-15 minutes on low heat.
  5. Once almost set, place pan into oven and broil for 3-5 minutes (keep an eye on it) remove once top has become firm.
    NOTE: I put aluminum foil on the handle of my pan before putting in the oven as I do not think it is oven proof.
  6. Serve 1/4 of the frittata on a plate, it goes well with a spinach or garden salad.

Four Season Quilt update and another pot holder

This weekend was very productive. I was able to make some progress on my must finish projects and finish off another pot holder (which I must so turned out well).

WIP Wednesday at Freshly Pieced

  • I started the framing of my four seasons quilt I am going with low-tone yellows, creams and beige. I have now decided to use the jelly roll of Notting Hill design by Joel Dewberry for Free Spirit.

  • I tried out the “quilt-as-you-go method” described in this tutorial by Elizabeth Hartman on Oh, Fransson blog site by making this pot holder.I loved this method.Materials
    I love the teapot fabric (“Tea Delights in Jam from Splendor 1920 by Bari J. for Art Gallery Fabrics”) and the natural look with natural Osnaburg fabric. I bought it in blue and the yellow mustard (“Tea Delights in Honey”). The dandelion fabric is from Spoonflower, and the rest of the fabrics used in the pot holder are from Joann’s.

    Ultimately, I want to make a Amy Butler’s weekender bag like in Elizabeth Hartman’s Blog, as one of my new projects on my 2013 goals. My pattern arrived last week, so these pot holders are allowing me to test out the quilt-as-you-go method.

2013 Goals – Progress report

  • Blog a minimum of 3 times a week (Doing well for January)
  •  Finish my four seasons quilt (In progress)
  • Try 12 new sewing/quilt or patchwork projects (1 down – Pot holders using quilt-as-you-go-method)

Meal Plan – Week 3 and winter weather

This week was not a good week, with regards to, keeping to the program. I did not keep to the plan, I ran late all week so skipped breakfast, thinking I would pick it up at work – did not work. Lunch was the only menu where I did ok. The good news is, I now know, that I eat when I have a high-pressure day at work and come home tired. So, I will just have to make sure there are prepared meals in the fridge.

Here’s this weeks menu, where most of this are variations on last week since I have most of the ingredients still in the fridge. Goals for this week is to get on plan and introduce the exercise.

Saturday Egg Tempeh Stir Fry
Sunday Oatmeal with grated apple + sultanas Slow-cook Dahl + Wild Rice
Monday Oatmeal with Banana+Unsalted Peanut Butter Steamed Fish and Vegetable Pockets + Quinoa
Tuesday Fruit Salad with Flax seed Vegetable Pasta Bake
Wednesday Fruit Salad with Flax seed Pizza (using FlatOut Bread instead of Whole Wheat Pita)
Thursday Oatmeal with grated apple + sultanas Vegetable Frittata
Friday Fruit Salad with Flax seed Bean Burgers + Salad

Budget this week, will be easy as there is nothing I need to go out and buy. Funny thing is yesterday’s ice fall (yes ice fall – not snow) has made it very unlikely to get out of the house today anyway :-). The ice is at least an inch deep around and on the house and my poor plants are buckling under the weight. I am refusing to look at the veggie garden, as I will be upset if I loose all of the crop.

The ice is starting to melt but the concern will be if it can completely melt in time before the evening drop in temperatures again – which means it could be another inside day tomorrow. Anyway, this is how it looks at the moment.

Sean’s Playground had a nice coating of ice. His job today was to de-ice his playground which he thoroughly enjoyed.
