This week was a challenge that’s for sure. We started the week with my son having strep throat and then just when we thought we had that kicked; the pipes burst in our master upstairs bathroom leaving our kitchen ceiling with significant damage.
We made it through, waiting for the workers to come back Monday and put our house back to normal. In the meantime, this is our meal plan for the week:
DAY | BREAKFAST | DINNER |
---|---|---|
Monday | Oatmeal with Banana and Almond butter | Vegetable Burritos |
Tuesday | Fruit Salad with Flax seed | Quinoa Spaghetti and Tomato Sauce |
Wednesday | Whole Grain Cereal with Soy | Pizza (using FlatOut Bread instead of Whole Wheat Pita) |
Thursday | Oatmeal with Grated Apple and Sultanas (Golden Raisins) | Aloo Gobhi (Indian Cauliflower and Potato Curry) |
Friday | Oatmeal with Banana and Almond butter | Grilled Fish and Vegetables |
What are you all eating?
How was the quinoa pasta? I’ve never tried anything except plain old wheat (and rice, I guess, though I tend not to thank of rice noodles as pasta, exactly, or bean thread noodles) – you don’t really see much beyond wheat, rice, and corn pasta around here. I
I picked it up, as well as penne brown rice pasta, at Target believe it or not. I think we will have it tomorrow – I will let you know how it tastes 🙂 I loved the brown rice pasta.
Oh, yeah. I guess it isn’t Tuesday yet, is it? 😀 I’ll blame it on working a lot last week…
So the Quinoa Spaghetti from Target was very good. Nice and thick, cooks well. My husband and son devoured the Spaghetti as usual – which the test scale is excellent !!
Heh.. that’s good! I’m always curious about the more unusual pastas out there, but never seem to try them.
