Meal Plan {29.06.2013} + Carrot Raisin Salad

This week has been a little difficult – in total over 4 days, I have spent 24 hours in the airport due to cancelled flights to and from New York. Very tedious. Good news is, I got two rows of hexagons almost completed.

In desperate need of vegetables (airports are not the best for healthy food)…Today we are having coleslaw and Carrot raisin salad. The cabbages and carrots came from our garden.

Ingredients (modified from Rachel Ray’s Food Network recipe)

  • 8-10 Carrots grated
  • 1 Tbsp Poppy Seeds
  • 1 lemon’s juice
  • 2 tbsp Brown Sugar
  • 1/4 cup orange juice
  • 1/2 cup raisin
  • 1/2 cup golden raisin
  • pinch salt

Toss all ingredients in a bowl with hands. Chill for 30 minutes or longer. Serve.

Stuffed Portobello Mushrooms

With Summer upon us, grilling (or BBQ) season is starting. One of our favorite recipes is this stuffed portobello recipe, which we have already tried out 🙂

Ingredients (original recipe source: Weight Watchers)

3 Portobello Mushrooms
1/4 cup Goat cheese or feta cheese crumbed (I use soft)
Bunch of fresh Spinach
Tbsp of fresh basil
1 Tbsp Spring onions (scallions)
2 Tbsp Bread crumbs
2 Tbsp Chicken stock
1 tsp olive oil
Pinch of salt
Pinch of fresh cracked pepper

  • Finely chop the mushroom stems. Combine the chopped stems, the spinach, cheese, bread crumbs, scallion, chicken stock, basil, oil, salt, and pepper in a medium bowl.
  • With a small spoon, stuff each mushroom cap with the spinach mixture; place in a single layer in a 9 x 13-inch grill platter.
  • Drizzle with 1-2 Tbsp water around the mushrooms in the pan. Grill for 15-20 minutes on the Grill element.
  • Bake until the cheese is melted and the filling is hot. Serve at once.

Meal Plan {18.05.2013}

Wow, this week was a crazy busy at work. I did not get to work on much at home and I definitely missed some blogging. I really missed doing the finish it Friday this week….isn’t funny how breaking a routine can be so disorientating 🙂

I am hoping, leading up to Memorial day weekend though, things will calm down. I am looking forward to the long weekend and spending time at the beach in North Carolina. Until then, here is our meal plan for the week:

Meal Plan {27.04.2013}

The hubby is healing well, from the broken humorous he sustained last week. It looks like we will be taking it easy for several weeks, as it could be 8-12 weeks before he has full use of his arm back. It will definitely, still be in the sling and requiring care, while in New York the beginning of June. The rest of the week went well and we are getting use to a new schedule, with only having one fully functional adult.

A few things I have found out during this challenging week:

  • I hate doing dishes, this is definitely up there as a #1 thing
  • I was pleasantly amazed at how much the hubby helped out with the day to day things like dishes, playing with our son while I sew, swimming lessons and most importantly picking our son up so we can both work full days. I sure miss at the moment  🙂
  • I am really happy with these pre-planned, pre-cooked meals, that I can do on the weekend to help during the week. This week Cuban beans and rice, Potato Quiche, and the meatball pasta bake were made ahead of time. I will be pre-preparing the lunches for the hubby so he can eat during the day when I am not around.
  • My son is very helpful and caring. He also does amazingly entertaining himself in the backyard.

In keeping with making things simpler this week, here’s the meal plan.

Outdoor art pieces + Meal plan {08.04.2013}

IMG_0690This week was kind of quiet, so not much to recap. I do have some photos to share though, of the first amazing Spring weekend we have had.  We went to our favorite cafe – Guglhupf  ( a german bakery), where they have added a couple of cool outdoor art pieces to their collection.

New recipes for inspiration this week – week 10

I have been so inspired for this week’s menu – look at this site for “Meat Free Week (March 18-25)” recipes. I was reading them out to my husband last night with my mouth watering. So, I am going to choose from this list all week (except Saturday). I will let you know my favorite and any changes I make to the recipes.

You may say a recipe every day … yes, I work full-time but….
My husband can not drive at the moment, due to a shoulder injury from playing soccer and thinking he was still a teenager ;-), and I will have to pick him and my son up by 3:30 pm every day. This will give me more time in the evening to cook 🙂 before I catch-up on work in the evening.

My major task over the weekend:
I do have to plant my indoor seeds this weekend for my summer garden – I am putting in  tomatoes, romaine lettuce, zucchini, cucumbers, bell peppers (planting a little later this year) and maybe some spinach. I am excited about my winter garden which now seems to be coming along (yes in Spring)….my photo’s the week are of, my first head of broccoli and cabbage which appeared this week.

Weekly Meal Plan – week 9

Let me start by saying, I hate daylight savings when you loose an hour, especially when you only realize it is happening a couple of hours before bed. Woke up this morning, had breakfast and now finishing my breakfast latte while writing this blog and it is midday already – I have not done a whole lot yet. Anyway, into the recap from the week and this week’s plan…..

This week was a much better week. I actually cooked a couple of meals in preparation for the week, and there was less stress at work which made it easier to come home and get things done. I got some brownie points as I was proactive and organized 2 days of walking at lunch with a friend starting this week.

We have switched to gluten-free pasta now for about 6 weeks and I will say everyone in the house (my husband, 5-year-old and myself), have found two great brands that we all love. In fact, we like Quinoa Gluten-free Pasta – Spaghetti Style and the Archer farms Gluten-free Fusilli Pastas better than the old stuff we were using. The price ($2.50-$4.00 range at our local Super Target), taste and overall cooked result are our main reasons for liking these two products. My son, who is a little fussy (not too bad, he’s jus not a vegetable person), asks for seconds and devours the spaghetti by the bowlful.
