FYI, I sometimes make pumpkin soup with slices of smoked sausage and pureed chipotles in adobe. Really really simple but yummy.
That is similar to how I make my corn chowder 🙂
I make a pumpkin purée in the food processor from baked pumpkin – I never thought about using a slow cooker. That curried pumpkin soup sounds delicious!
The apple adds a great flavor, I just freeze the puree and when I need it I pull it out and add the other stuff to it…like cream or coconut milk etc.
The baked pumpkin sounds good….adding roasted garlic would be good to don’t you think?
