Stuffed Portobello Mushrooms

With Summer upon us, grilling (or BBQ) season is starting. One of our favorite recipes is this stuffed portobello recipe, which we have already tried out 🙂

Ingredients (original recipe source: Weight Watchers)

3 Portobello Mushrooms
1/4 cup Goat cheese or feta cheese crumbed (I use soft)
Bunch of fresh Spinach
Tbsp of fresh basil
1 Tbsp Spring onions (scallions)
2 Tbsp Bread crumbs
2 Tbsp Chicken stock
1 tsp olive oil
Pinch of salt
Pinch of fresh cracked pepper

  • Finely chop the mushroom stems. Combine the chopped stems, the spinach, cheese, bread crumbs, scallion, chicken stock, basil, oil, salt, and pepper in a medium bowl.
  • With a small spoon, stuff each mushroom cap with the spinach mixture; place in a single layer in a 9 x 13-inch grill platter.
  • Drizzle with 1-2 Tbsp water around the mushrooms in the pan. Grill for 15-20 minutes on the Grill element.
  • Bake until the cheese is melted and the filling is hot. Serve at once.

Mother’s day gift + Meal Plan {12.05.2013}

When living in Germany, my too favorite dishes were broth fondue and raclette, both were introduced to me by my husbands Grandmother.

Now in the US, I found a replacement for the Fondue….a restaurant called “The Melting Pot”. This is my favorite restaurant, which is my choice whenever I get to pick the spot for those special occasions.

Look what I got for Mother’s day…it is a Raclette set!!! For those who don’t know what a Raclette set is, it involves an electric table-top grill with small pans, known as coupelles, to heat slices of cheese with miscellaneous vegetables.

Ingredients

  • Boiled Potatoes
  • Tomatoes
  • Bell peppers
  • Onion
  • Cheese
  • Ham or Chicken

Optional: Grill the onions and the bell pepperIMG_7282

In the coupelles layer the potato, ham (or chicken), and cheese. Place the tray under the grill tray so the elements add as a grill. Leave for ~ 5 mins.IMG_7283

Top with grilled onion, bell peppers and fresh cracked pepper. Use the scraper and scrap the ingredients onto a plate and serve.

This was dinner last night and boy it was great!! I love both fondue and raclette for the same reasons…both a very social activities as you have to cook your own food and secondly, you eat slower.

Meal Plan {27.04.2013}

The hubby is healing well, from the broken humorous he sustained last week. It looks like we will be taking it easy for several weeks, as it could be 8-12 weeks before he has full use of his arm back. It will definitely, still be in the sling and requiring care, while in New York the beginning of June. The rest of the week went well and we are getting use to a new schedule, with only having one fully functional adult.

A few things I have found out during this challenging week:

  • I hate doing dishes, this is definitely up there as a #1 thing
  • I was pleasantly amazed at how much the hubby helped out with the day to day things like dishes, playing with our son while I sew, swimming lessons and most importantly picking our son up so we can both work full days. I sure miss at the moment  🙂
  • I am really happy with these pre-planned, pre-cooked meals, that I can do on the weekend to help during the week. This week Cuban beans and rice, Potato Quiche, and the meatball pasta bake were made ahead of time. I will be pre-preparing the lunches for the hubby so he can eat during the day when I am not around.
  • My son is very helpful and caring. He also does amazingly entertaining himself in the backyard.

In keeping with making things simpler this week, here’s the meal plan.
