Stuffed Portobello Mushrooms

With Summer upon us, grilling (or BBQ) season is starting. One of our favorite recipes is this stuffed portobello recipe, which we have already tried out 🙂

Ingredients (original recipe source: Weight Watchers)

3 Portobello Mushrooms
1/4 cup Goat cheese or feta cheese crumbed (I use soft)
Bunch of fresh Spinach
Tbsp of fresh basil
1 Tbsp Spring onions (scallions)
2 Tbsp Bread crumbs
2 Tbsp Chicken stock
1 tsp olive oil
Pinch of salt
Pinch of fresh cracked pepper

  • Finely chop the mushroom stems. Combine the chopped stems, the spinach, cheese, bread crumbs, scallion, chicken stock, basil, oil, salt, and pepper in a medium bowl.
  • With a small spoon, stuff each mushroom cap with the spinach mixture; place in a single layer in a 9 x 13-inch grill platter.
  • Drizzle with 1-2 Tbsp water around the mushrooms in the pan. Grill for 15-20 minutes on the Grill element.
  • Bake until the cheese is melted and the filling is hot. Serve at once.

WiP Wednesday {22.05.2013}

For our Guild meeting next month (Triangle Modern Quilt Guild), I signed up to participate in a 18″ x 18″ pillow swap.  I saw this as the perfect opportunity to try my new book purchase “Pillow Pop” out.

I decided I wanted to use blue and green as more the solid prints and mix them in with low-volume prints. I have chosen from the book to do the “Crystallized” Pattern by Angela Mitchell, it uses 100 HST (Half – Square Triangles).

I spend the evening last night in front of the TV cutting all the 3″ x 3″ squares I will need. Here’s a peek.

Mid-May Goal check-in

Today, I am squeezing under the wire to report my mid-May goals update. I am linking up with “A lovely year of finishes”.

    Completed and sent. See this post
  • Madrona Road Mini Quilt
    Finished and posted yesterday.

    Underway, pattern chosen – using a pillow pop design. 
  • Finish machine quilting “Four Seasons in One Day” Quilt
    No more progress
  • Start one of the mini quilts (see side bar)
    Not started.

So overall, I don’t think to bad, about 50% of projects finished or underway. I also completed a set of pot holders which I blogged about here.
