Meal Plan {18.05.2013}

Wow, this week was a crazy busy at work. I did not get to work on much at home and I definitely missed some blogging. I really missed doing the finish it Friday this week….isn’t funny how breaking a routine can be so disorientating 🙂

I am hoping, leading up to Memorial day weekend though, things will calm down. I am looking forward to the long weekend and spending time at the beach in North Carolina. Until then, here is our meal plan for the week:

Mother’s day gift + Meal Plan {12.05.2013}

When living in Germany, my too favorite dishes were broth fondue and raclette, both were introduced to me by my husbands Grandmother.

Now in the US, I found a replacement for the Fondue….a restaurant called “The Melting Pot”. This is my favorite restaurant, which is my choice whenever I get to pick the spot for those special occasions.

Look what I got for Mother’s day…it is a Raclette set!!! For those who don’t know what a Raclette set is, it involves an electric table-top grill with small pans, known as coupelles, to heat slices of cheese with miscellaneous vegetables.

Ingredients

  • Boiled Potatoes
  • Tomatoes
  • Bell peppers
  • Onion
  • Cheese
  • Ham or Chicken

Optional: Grill the onions and the bell pepperIMG_7282

In the coupelles layer the potato, ham (or chicken), and cheese. Place the tray under the grill tray so the elements add as a grill. Leave for ~ 5 mins.IMG_7283

Top with grilled onion, bell peppers and fresh cracked pepper. Use the scraper and scrap the ingredients onto a plate and serve.

This was dinner last night and boy it was great!! I love both fondue and raclette for the same reasons…both a very social activities as you have to cook your own food and secondly, you eat slower.

Marmite a piece of Kiwiana + Meal Plan {05.05.2013}

I am well and truly a New Zealand marmite kid 😉 and so now is my son. Marmite is a piece of Kiwiana, and I believe you really do have to grow up on it to appreciate it. It has been very difficult the last 12-18 months without marmite….it definitely was “Marmageddon“. Imagine, that you can no longer buy chocolate or coffee, it just disappeared from the shop and there is no replacement, what would you do??? Now you might understand 🙂

The shortage of marmite, was due to the series of earthquakes that struck Christchurch New Zealand in February 2011, that caused the factory to temporarily close due to damage. It was the only production factory of marmite.

Anyway, this week my Mum sent over our Marmite. We went straight out, bought fresh white bread from our local french bakery, added butter and marmite. It was delicious, scrumptious, wonderful…that salty taste – there is nothing else in the world like it 🙂

Garden update + Meal plan {04.14.2013}

Finally, Spring arrived and we have had an amazing amount of pollen fall this week. This picture was my attempt to try and sweep the pollen of the deck. Yes, all that yellow dust is pollen. I have lived in several places, and North Carolina is the only place I have seen this visible layer of pollen.

Good news, with the warmer weather, my winter vegetable garden has taken off. I picked the first lot of spinach, which we made into a salad for dinner tonight.

My first head of broccoli is nearly ready, I am thinking I can harvest it over the next day or two.

The cabbages, carrots and cauliflower are coming along. We tried a couple of the carrots but they are still quite small – the rest of these will be ready in the next 3-4 weeks.

Our meal plan this week includes some of our fresh vegetables, which saved us a little money. I did really well this week with staying away from sugar and process foods. I even got outside one lunch, at work, to exercise !!!

Outdoor art pieces + Meal plan {08.04.2013}

Week Recap and Meal Plan {31.03.2013}

This week, for me, was mostly about work. I had a day trip on Tuesday to Washington DC….there is nothing like leaving at 5:30 am and getting home at 8:00pm ;-). I was very thankful there is a Starbucks, right as you get past security at the airport, for a much needed morning coffee. The other thing is, my team is growing at work, to be ~10 people, so I spent most of the end of the week trying to put a plan together to help our group be successful.

While embarking on this exercise, I realized I needed a little more structure and realistic expectations in my life, as a whole. I need to gain more balance. How else can I (as a working mum) remain engaged with family, work, look after myself, an etsy store and have some fun ;-).

To start, I came up with a rough schedule for my blog. I say rough, as I might not have anything to share or I might be running a little behind:

Meal Plan – Week 6

I have to admit, I have not been doing a great job the last couple of weeks. So, I am re-assessing and to try and stay as much on track as possible, a couple of allowances have been added. This is to ensure I am keeping to the right food options, at least 80-90% of the time (that’s the goal anyway right :-), allowances are denoted with the ^).

I have also added my exercise commitment for the week.

*The family is having Pizza, I am traveling so will be trying to eat a vegan/Vegetarian meal out.
